Baking instructions for Dawn croissant squares: Recommended handling and preparation: Frozen, unbaked squares should always be stored in the freezer at a temperature of 0 degrees F or below. Remove only the number of squares to be baked. Return the remaining product to the freezer immediately. Handling: Place the frozen squares on parchment paper on a sheet pan. Cover and allow to stand at room temperature for 30 minutes or until flexible. Shape and fill as desired. Place in proofer and set temperature at 85-90 degrees F with 92-94 % humidity. Proof 20-30 minutes. Baking: Bake pastry as shown below depending on type of oven. Time will vary depending on dough form and filling used. Bake about 10-12 minutes. Conventional: Temp: 350 degrees - 360 degrees F. Rack: 350 degrees - 360 degrees F. Convention: 330 degrees - 340 degrees F. Convention: Finish as desired. Do not consumer before baking. Must be stored below 0 degrees F until baked.
