Keep refrigerated below 40 degrees F at all times. Ariane's serving suggestions: 1/4 inch slice makes 1/2 oz. medallion. Slice thin and cut into desired shapes. Put on top of toasted bread and garnish with sauternes jelly, creme fraiche or French caviar. Push through a pastry bag into mini pastry shells or in salted profiterole. Wrap in prosciutto. Place on top of a salad. Top off a steak right after cooking (Rossini).
