Uncle Ben's Infused Rice Mexican Flavor


 

Directions

Measurements: Number of servings - 1/2 cup - 24 - 48 - 102. 1/3 cup - 36 - 72 -154. Rice - 3 cups (3/4 qt) - 6 cups (1 1/2 qts) - whole bag (3 1/4 qts). Water - 5 1/3 cups - 10 2/3 cups - 5 1/2 qts. Butter or margarine (optional) - 3 tbsp - 1/3 cup - 2/3 cup. Cooking directions: Stovetop: 1. Combine rice, water and butter or margarine (optional) in a stockpot. Stir well. 2. Bring to a vigorous boil. Remove from heat. Cover tightly until most of the water is absorbed (about 15 minutes). 3. Transfer to steam table pan, place on steam table and keep warm (160 degrees F). Fluff with fork before serving. Hot water/steam table: 1. Combine rice, hot water (about 190 degrees F) and butter or margarine (optional) in an appropriate size steam table pan. Stir well. 2. Cover and place on steam table at 160 degrees F until most of the water is absorbed (about 35 minutes). 3. Keep warm (160 degrees F). Fluff with fork before serving. Oven method: 1. Combine rice, hot water (about 190 degrees F) and butter or margarine (optional) in an appropriate size steam table pan. Stir well. 2. Cover and bake in oven at 350 degrees F until most of the water is absorbed (about 20 minutes). 3. Remove from oven. Transfer to a steam table and keep warm (160 degrees F). Fluff with fork before serving. To retain vitamins/flavors do not rinse before or drain after cooking. For best results: For firmer rice, use less water and reduce cooking time. For softer rice, use more water and increase cooking time. To refrigerate cooked rice: cover tightly to keep grains from drying out and absorbing odors from other foods. To reheat cooked rice: add a small amount of water and cover. Heat in an oven, or on a stovetop. Fluff rice and serve.
