Uncle Ben's International Grains Arborio Rice

Cooking directions: 1. In a large stockpot melt 2 ounces butter. Add 1 cup chopped onion (optional) and sauté until tender. 2. Add 1 quart Arborio rice and stir until grains are completely coated. 3. Stir 2 3/4 quarts hot chicken stock (or hot water). Bring to a boil. 4. Reduce heat and simmer uncovered for 20-25 minutes, stirring frequently. Rice is cooked when tender. Rice can be served immediately or cooled and reheated to order as described in recommended serving procedure below. Recommended Serving Procedure (Risotto): transfer Arborio to sheet pan and spread to about one inch thick. Cover with plastic wrap and chill completely. For Risotto, add required amount of chilled Arborio rice to sauce pan. Add enough liquid (cream, stock or water) to thin consistency and beat through. Stir in additional ingredients as desired (ex. cheese, mushrooms). Oven method: 1. Combine 2 ounces melted butter and 1 quart Arborio rice in a deep haft-size steam table pan. Stir until rice is coated. 2. Stir in 2 3/4 quarts not chicken broth (or hot water). Cover and bake in 350 degrees F oven for 30-35 minutes or until rice is tender. 3. Rice tan be served immediately or cooled and reheated 10 order as described in Recommended Serving Procedure. To make 3 quarts: Number of Servings-1/2 cup (#8 scoop)-24, 1/3 cup (#12 scoop)-36. Arborio rice-1 qt. (11 cups). Chicken stock or water-2 3/4 qt. (11 cups). Butter-2 oz (1/4 cup). *Yield per 5lb. Bag: approximately 9 quarts cooked. For best results: For firmer rice, use less water and reduce cooking time. For softer rice, use more water and increase cooking time. Stir frequently.
