Preparation directions: Heat olive oil or butter in a heavy nonstick 2-quart saucepan. Add couscous and stir to coat. Toast couscous, stirring constantly, until lightly browned, about 2 minutes. Add broth or water and bring to a boil. Reduce heat to a gentle boil, cover and continue cooking, stirring occasionally, until most of the liquid has been absorbed and pasta is soft to the bite. Serving chart. Number of servings (about 2/3 cup prepared): 1 - Couscous (uncooked): 1/4 cup - Olive oil or butter: 1 teaspoon - Broth or water - 1 cup -Boil gently (covered) - 10 minutes. Number of servings (about 2/3 cup prepared): 2 - Couscous (uncooked): 1/2 cup - Olive oil or butter: 2 teaspoon - Broth or water - 2 cups - Boil gently (covered) - 12-13 minutes. Number of servings (about 2/3 cup prepared): 4 - Couscous (uncooked): 1 cup - Olive oil or butter: 1 tablespoon - Broth or water - 4 cups - Boil gently (covered) - 15-17 minutes.
