You will Need: Dixie Lily taco soup mix; 1lb ground beef; 1 cup diced onion; 2 - 14.5 oz cans of Mexican style stewed tomatoes; 1 - 14.5oz can of diced tomatoes; 1 - 15.25oz can of corn (drained); 1 - 4oz can of green chiles (optional); sour cream (topping); Mexican style cheese (topping); corn chips. Slow Cooker Method: (preferred method - no soak method). 1. Spread out dry beans and remove any foreign particles. 2. Rinse beans, and then place in slow cooker with 6 cups water. 3. Brown the ground beef in a large skillet, and drain the excess fat. Transfer the ground beef to the slow cooker. 4. Add 1 cup diced onion, 2 cans of stewed tomatoes, diced tomatoes, corn, and green chilies to slow cooker. 5. Add the contents of the Dixie Lily Taco Soup Mix seasoning packet. 6. Place slow cooker on high and cook for about 5 hours or until beans are tender (or low for 7-8 hours). Check water level and add hot water to beans if necessary. 7. Salt and pepper to taste. 8. Serve in a bowl. Top with sour cream and cheese. Stove Top Cooking Instructions: (Stock Pot) 1. Spread out dry beans and remove any foreign particles. 2. Rinse beans in cold water. 3. Cover beans with 2 inches of water and use one of the soak methods below: Quick Cook Method: Boil beans in water for 2 minutes. Remove from heat, cover and soak for one hour. Overnight Method: Cover beans with 2 inches of water and soak overnight. 4. Drain soak water and replace with 6 cups of fresh water. 5. Brown the ground beef in a large skillet, and drain the excess fat. Transfer the ground beef to the slow cooker. 6. Add 1 cup diced onion, 2 cans of stewed tomatoes, diced tomatoes, corn, and green chilies to slow cooker. 7. Add the contents of the Dixie Lily Taco Soup Mix seasoning packet. 8. Bring beans to a boil. Reduce heat to simmer for about 2 hours or until tender. Check water level and add hot water if necessary. Stir occasionally. 9. Salt and pepper to taste. 10. Serve in a bowl. Top with sour cream and cheese.
