50% merlot, 35% cabernet sauvignon & 15% malbec. An award winner every year, Chateau Bellevue Peychameau is an extraordinary wine produced from a 37-acre hillside vineyard on the far-easter border of Bordeaux, near Bergerac. After manual harvest and sorting, the grapes are cold soaked for 8 days at 10°C to extract fruit and color. Fermentation for 7-10 days at 28°C in thermo-regulated steel tanks with pumping over three times daily. Micro-oxygenation during fermentation to obtain fruit, richness and silky tannins. Aged 12 months in French oak barrels, 1/3 new. Deep purple color. Intense, expressive nose of red cherries, blackberries, toast and licorice. Rich and concentrated in the mouth with silky tannins and a nice long finish. Enjoy it alone or with steaks, pork loin, lamb chops, turkey and cheeses. www.aquitainewine.com.
