Preserving with Quattro Stagioni Jars and Lids: Preparation: Wash the jars thoroughly with hot water before use. Always use new lids. How to fill the jars: Pour the product at room temperature into the jar. Fill the jars up to 0.4 inch below the rim (0.2 inch for 0.15 l jars). Clean the rims of the jars thoroughly. Before pasteurization: Screw the lid with moderate strength and stand them in a pot with the lids facing up. To avoid breakages, put kitchen towels between jars. Pasteurization: Cover the jars with lukewarm water. Follow the boiling time as indicated in recipe; boiling time starts when the water boils vigorously. The water level always needs to be above the jar, so add boiling water when necessary. After pasteurization: Leave the jars to cool the pot. If the centre of the lid is lowered, the pasteurization process has been successful, otherwise repeat the process using a new lid. Use: Before opening, make sure the centre of the lid is still lowered (this indicates perfect vacuum and preserving).
