Estate wine. Grown, produced & bottled on the estate wine of origin Simonsberg-Stellenbosch. Style: full bodied-deep ruby red colour - cassis, blackcurrant and bramble berry with notes of cigar box and a hint of bell pepper. Classic in style, with a long dry finish. Soil: decomposed granite and Hutton soils with a high clay content which assist with water retention. Age of vines: on average 25 years. Trellis of vines: 5 wire hedge. Yield: 1,100 liters/acre. Vinification: 5.5 days on skins in open fermenters (at) 82 degrees F. - cap punched manually every 2nd hour. Oaking: 24 months in new 225 lit. French nevers oak - 50% new, 50% 2nd fill.
