For your protection, follow these safe handling instructions: Keep refrigerated or frozen. Thaw in refrigerator or microwave. Keep raw meat and poultry separate from other foods. Wash working surfaces (including cutting boards), utensils, and hands after touching raw meat or poultry. Cook thoroughly. Keep hot foods hot. Refrigerate leftovers immediately or discard. Cooking Instructions: If frozen, thaw duck in refrigerator 36-48 hours. Preheat oven to 375 degrees F. Strip bag off duck. Remove neck, giblets, and orange sauce packet from body cavity. Rinse duck under cool water. Season to taste. Roast uncovered, breast up, on rack in roasting pan using the following chart: 4 lbs 1 hour 25 min. 4 1/2 lbs 1 hour 40 min. 5 lbs 1 hour 50 min. 5 1/2 lbs 2 hrs. 6 lbs 2 hrs 15 min. 6 1/2 lbs 2 hrs 25 min. Remove from oven when internal temperature reaches 180 degrees F (82 degrees C), measured at the thigh joint. The legs move freely and juices run clear when duck is done. One duck serves 2-4 people. Keep frozen.
