Pro Tips for Tempura: 1. Use ice cold sparkling water, and keep the batter cold by holding it in a second bowl of ice. 2. Pat veggies and shrimp dry before they're dipped into the batter. 3. Slice broccoli and cauliflower into florets, and mushrooms in half. Cut bell peppers and onions into rings 1/2-inch thick, and asparagus and green beans into bite-size pieces. Slice denser veggies (carrots, sweet potato, eggplants, zucchini) on the diagonal into 1/4 inch slices. 4. Fry denser vegetables first (sweet potatoes, squash), at 345 degrees F- 350 degrees F, so they'll cook through without burning.
