Basic Recipe for Quick Grits: 3 cups water; 1 tsp salt; 1 cup Bob's Red Mill corn grits/polenta. Bring water and salt to a boil in a medium pot. Add corn grits and reduce heat. Cook slowly for about 5 minutes, stirring occasionally. Remove from heat, cover and let stand for 1-2 minutes. Makes 4 servings. Store in a cool, dry place.
