Directions

Keep refrigerated. Creamed Chipped Beef: Cook 3 oz chipped beef in 4 tbsp butter until edges sizzle. Blend in 4 tbsp flour. Slowly add 2 cups milk. Cook over medium heat, stirring constantly until thick. Add 1/2 tsp Worcestershire sauce, if desired, and a dash of pepper. Serve over toast, biscuits, potatoes, or rice. Dried Beef Roll-Ups: Mix 3 oz cream cheese with 1 tsp horseradish or chives, and a dash of paprika. Spread a thick layer on dried beef slice. Roll up as for a jelly roll. Chill. Cut into short lengths and serve with toothpicks. Dried Beef Dip: 1 (8 oz) package of cream cheese (soften at room temperature). Add mayonnaise or milk until mixture becomes the creamy consistency of a dip or spread. Add 3 oz chipped dried beef (chopped in tiny pieces), 1 tsp horseradish (to taste). Serve with crackers, chips, pretzels, vegetables, etc. May be kept in home freezer.
