Keep refrigerated. Let's cook this: Pull from fridge and let sit for 10 min. Pat dry. Salt and add a little high-heat oil to both sides. Place in cast-iron or non-stick pan preheated to medium high. Cook according to chart. For perfect results, test steak on both ends with food thermometer. Use coolest temperature to indicate 'doneness.' Let rest for 7 minutes. Devour. Temperature (coolest spot) - average time/side: Rare: 90-100 degrees F - 3-4 min./side. Medium rare: 100-110 degrees F - 4-5 min./side. Medium: 115-125 degrees F - 5-6 min./side. Medium well: 125-135 degrees F - 6-7 min./side. Defrosting? Set in refrigerator overnight or tear off pouch and submerge in cool water; replace water every 30 minutes until thawed.
