Cook Time: 35 minutes. Serves: 2. In a sauce pot, add water, bring to a boil. Add pasta and cook al dente 7-9 minutes. Drain & reserve. While the pasta is cooking open artichoke hearts, drain & reserve. Rinse chicken breast & pat dry, cut into medium dice pieces. Heat a sauté pan, heat 2 tablespoons of olive oil over medium heat. Add diced chicken breast and sear, brown on all sides until thoroughly cooked (165°F internal temperature). Add spinach, artichokes, grape tomatoes, basil, oil and pasta. Blend & heat thoroughly. Plate & finish with a squeeze of half lemon & parmesan cheese.
