Mix 1/2 teaspoon kosher salt, 1/2 teaspoon sesame oil, 2 tablespoons water and 1 tablespoon cornstarch. Place mix and chicken in a large resealable bag or bowl and marinate for 15-30 minutes. In a large nonstick skillet or wok pan heat 2 tablespoons oil over medium heat. Add chicken, dispose of the marinade bag, and cook for 2 to 3 minutes or until chicken is done (165°F) and set aside. Step two: In same skillet or wok pan, heat 2 tablespoons oil over high heat. Add ginger, red onion and red peppers and cook for 1 to 2 minutes. Drain the syrup from the pineapple. Add pineapple chunks, pea pods and carrots and cook for 2 more minutes. Step three: Add sweet and sour sauce to vegetables and bring sauce to a boil until sauce looks clear. Add chicken and green onions and bring sauce back to a boil, sauce will thicken the longer you cook it.
