Directions

Step 1: Preheat oven to 400 degrees. Place two cups of water, 1 tablespoon of olive oil, 1 1/2 tablespoons of harissa paste and contents of Near East couscous spice packet in medium saucepan on high heat. Proceed to next step while waiting for the water to boil. Step 2: Crush Stacy's pita chips in package using a rolling pin, meat pounder or fist until finely crushed. Using a small bowl, toss together crushed pita chips, 1 tablespoon of olive oil, and fresh herbs. Place salmon fillets on a parchment paper-lined baking sheet. Spread 1 tablespoon of hummus over each salmon fillet; coat with chip mixture. Bake at 400 degrees for 10-15 minutes or until fish starts to flake. TIP: Salmon should be cooked for approximately 5 min per 1/2 inch thickness. Step 3: When water has come to a boil, stir in couscous, cover saucepan, and immediately remove from heat. Leave covered saucepan to sit, allowing couscous to cook through for at least 5 minutes. Step 4: Toss arugula and tomatoes with dressing, divide evenly among plates. Fluff couscous with fork; divide evenly among plates. Top with salmon, garnish with lemon and enjoy!
