Product Storage: It is recommended that product be stored at room temperature after receiving from your Distributor, unless inventory was received frozen and store is equipped with a freezer and the below guidelines are followed. Refrigerator storage is not recommended as it dries pastry products out and will not extend shelf life. Product Handling: When stocking the shelves, older product needs to be rotated to the front. Following the below handling instructions, the ambient or freshly thawed product needs to be dated and priced, as applicable, and placed behind existing product: Frozen Product: If product is received frozen, it must be thawed, dated, and priced before placing on shelf for sale. Allow to thaw for 3 hours. Do not refreeze product once thawed. Product must be date coded and priced on day of thaw. Frozen product has the number of sell through days followed by a D stamped on the package along with Julian code for production purposes. For example, 450 signifies that product should be coded with a best by date 45 days from the day of thaw. Refer to Mrs. Freshley's Product Guide for shelf life for each individual item. Tag each piece of product with the correct shelf life and price. If store is equipped with a freezer, excess frozen inventory can be stored for 6 months in a freezer if the temperature is kept between-18 and -5 degrees Fahrenheit. Fresh Product: If product is received ambient from distributor with a Best If Used By Date printed on package, it must be priced. Existing product on the shelf needs to be rotated to the front and new product placed behind existing product on shelf for sale.
