Directions

Cooking Directions: Combine 1 1/4 cup rice with 2 cups water in a medium-size pot. Add 1 tsp olive oil and salt (optional). Bring to boil. Reduce heat to medium-low, cover and cook for 20 minutes, or until all liquid is absorbed. Remove from heat and let stand covered for 5 minutes. Fluff with a fork and serve. Makes 5 servings.
