Directions
Sort and wash before use. Preparation Instructions: Soaking Instructions: For every 1 cup (250 ml) of lima beans, add 3 cups (750 ml) of water. Cold Water Soak: Combine lima beans and water and let stand 8 hours in the refrigerator. Hot Water Soak: Combine lima beans and water and boil for 5 minutes. Remove from heat, cover and let stand 1 hour. Discard the soaking water, rinse with cold water and cook according to recipe. Cooking Instructions: Yield: 1 cup (250 ml) of dried lima beans = 2 cups (500 ml) of cooked lima beans. Bring 1 cup (250 ml) of lima beans and 3 cups (750 ml) of water to a boil. Reduce heat and simmer for 60-120 minutes until tender. Add 1 tsp (5 ml) of vegetable oil to the cooking water to reduce foaming. Appliances vary in power, these instructions are guidelines only. Keep in a cool and dry place.
