Directions

Directions for use: Stage 1: Large batch: 25 lb deluxe muffin mix. 6 lb 4 oz water. Small batch: 5 lb deluxe muffin mix. 1 lb 4 oz water. Place water into bowl, then add deluxe muffin mix. Blend, with paddle, 1 minute on 1st speed to incorporate. Cream 2 minutes on 3rd speed of 4-speed machine (2nd speed of 3-speed machine). Stage 2: Large batch: 6 lb 4 oz water. Small batch: 1 lb 4 oz water. Incorporate water 1 minute on 1st speed. Scrape down. Cream 2 minutes on 3rd speed. Bake at 370 degrees F for 20 to 22 minutes. Fruit muffins may require a slightly longer baking time. For blueberry muffins: add 1 1/2 lb still frozen blueberries to above formula. Refrigerated coffee cakes: Scale: 14 oz into 8" layer pan. Refrigerate until needed (not more than 3 days). To finish: take from refrigerator and spread fruit filling over entire top of cake. Top with crumb topping made from 6 lb R&H® white cake base and 12 oz butter or margarine. Bake at 360 degrees F for 35-45 minutes. These instructions are intended as a guide and may require changes to fit individual shop conditions. Store in a cool, dry place.
