Directions

How to Prepare: Sort and rinse blackeye peas. Place in a large pot. Soak: add 3 cups of water for each 1 cup (1/2 lb) of blackeye peas, soak as desired, below; rinse and drain before cooking. Quick: heat to boiling; boil 2 minutes. Remove from heat; cover and let stand 1 hour. Overnight: cover; let stand 6-8 hours or overnight. Cook: in large pot, add 3 to 4 cups of water for each 1/2 lb soaked blackeye peas. Heat to boiloing. Reduce heat, cover and simmer 1 1/2 to 2 hours or until desired tenderness. Suggestion: Blackeye peas are a natural agricultural product. Despite the use of, modern processing equipment, it is not always possible to remove all foreign material. Before cooking, sort split peas to remove small stones or soil. Rinse under running water.
