How to Prepare: Sort and rinse the lentils. Place in a large pot. Add 2.5 to 3 cups of water for each cup (1/2 LB) of peas. (If extra softness is desired, soak for an hour). Season to taste, heat to boiling, reduce the heat, cover and simmer for 40 minutes or until desired tenderness. Suggestions: Split peas are natural agricultural product. Despite the use of modern processing equipment, it is not always possible to remove all foreign material. Before cooking, sort split peas to remove small stones or soil. Rinse under running water.
