Vegetable soup. Preparation time: 30 minutes. Cooking Time: 60 minutes. Ingredients: 1 sachet Caribbean Sunshine Vegetable Soup Mix; 1 lb. yellow yams diced; 2 medium Irish potatoes diced; 1 ear corn sliced; 1 semi ripe plantain sliced; 1 teaspoon Caribbean Sunshine All Purpose Seasoning; Caribbean Sunshine Scotch Bonnet Pepper Sauce (to taste); three quarts water. Directions: Bring the water to a boil. Add one sachet of Caribbean Sunshine Vegetable Soup Mix and the yellow yams, potatoes, corn, and all purpose seasoning to the water. Stir properly and continue to boil for 15 minutes. Add the plantain and scotch bonnet pepper sauce and let simmer on medium high heat for another 10 minutes or until vegetables are completely cooked. Serve hot! Use Caribbean Sunshine Vegetable Soup Mix to add flavor to your chicken, meat, seafood or rice dishes. Caribbean Sunshine Vegetable Soup Mix can also be enjoyed as a delicious broth. Store in a cool dry place.
