Directions: To Prepare Quinoa Soup: Place quinoa in a saucepan, clean and rise well. Add 4 cups of cold water, bring to boil, cover, lower heat and simmer gently until tender, or somewhat translucent with tiny ivory rings on each grain. Season to taste, add chopped vegetables like carrots, cabbage, green faba and potatoes. No meat needed, quinoa is high in protein.
