Brewing tips: To make these beans sing, plan to use them within two weeks of purchase. Use good quality filtered or spring water. The ideal recipe calls for a brew ratio of about 1 part coffee to 16 parts water. Just apply this 1:16 ratio to whatever you want to brew. For a 12 ounce cup, use 22 grams of coffee per 355 grams of water. If you don't have a scale at home, try 3 tablespoons of coffee per 12 ounces of brew water. Water temperature is important, too: 200°F is great.
