Cook according to chart. For perfect results, test steak on both ends with food thermometer. Use coolest temperature to indicate 'doneness.' Let rest for 7 minutes. Devour. Rare - Temperature (Coolest Spot) 95-105°F. Average (Time/Side) 3.5-4 min./side. Medium Rare - Temperature (Coolest Spot) 105-115°F. Average (Time/Side) 4-4.5 min./side. Medium - Temperature (Coolest Spot) 115-125°F. Average (Time/Side) 4.5-5 min./side. Medium Well - Temperature (Coolest Spot) 125-1355°F. Average (Time/Side) 5.5-6 min./side. Defrosting? Set in refrigerator overnight or tear off pouch and submerge in cool water; replace water every 30 minutes until thawed.
