It normally has a light brown color, the natural color of cane sugar. It takes its name from the Demerara colony in Guyana, which was the original source of this type of sugar. Demerara is a non refined sugar and preserves all sugar natural flavor. Caribbean Rhythms Demerara sugar has a unique production process that takes the first pressing of juice from sugar cane and slowly heats it to evaporate the water out of it, causing it to crystalize. To complete the drying process, the crystals are then spun in turbines or centrifuges which help to remove moisture and keep a natural coating of sweet golden molasses giving a special flavor, aroma and color to your recipes, coffees and drinks.
