Helpful Hint: Beans are a natural agricultural product. Despite use of modern cleaning equipment, it is not always possible to remove all foreign material. Sort and rinse beans before cooking. To Clean: Rinse beans and discard discolored beans or foreign matter. Soaking Method: Cover 1 lb. of dried beans with 10 Cups of water. Soak beans overnight or at least 6 hours. Put in refrigerator if desired. Cooking Instructions: Bring 10 Cups of water to a boil. Add 1 lb. dried, rinsed beans to boiling water and return to a boil. Cover and cook over slow heat until tender and soft. Add salt when beans are barely tender.
