Yield 2 servings. 1. Prepare ingredients: Cut one lime into wedges, and juice the other lime. Use a medium mixing bowl to make the marinade. Stir together ¼ cup yogurt, 1 Tbsp. lime juice, turmeric, garam masala, cayenne (add ¼ – ½ tsp. if you like some heat), and a pinch of salt. Add chicken, stirring to coat, and set aside to marinate for at least 15 minutes. 2. Make the raita sauce by stirring together remaining ½ cup of yogurt, sliced cucumber, 1 Tbsp. of the lime juice, cumin, coriander, chopped cilantro, half of the green onions and a pinch of salt. Set aside. 3. Heat a small amount of extra virgin olive oil in a large non-stick skillet over high heat. Add chicken to the pan and allow to brown on one side, about 3-4 minutes. Turn the chicken and add SEED’S of CHANGE ® Tikka Masala Simmer Sauce and peas to the pan, continue to cook until chicken is cooked through, 3-5 minutes more. 4. Heat SEED’S of CHANGE ® Brown Basmati rice according to package directions and divide between 2 bowls. Spoon Chicken Tikka Masala over rice, finish with the riata sauce and garnish with remaining green onions and lime wedges.
