Bulgar, with Garden Vegetables

1. As a Side Dish: Empty mix into a bowl. Add 4 cups hot chicken or vegetable broth or bouillon to bowl. Stir. Cover. 2. After 10 minutes, stir again. Cover for another 10 minutes. Fluff with a fork and serve. Serve with grilled chicken, fish or steak or as a stuffing. 3. As a Salad: Follow above and refrigerate. When cool add 1/2 cup diced red onion and 1 cup frozen baby peas. Dress with 1/4 cup lemon juice or cider or wine vinegar mixed with 1/3 cup olive oil. Shake well and pour over Bulgar. Stir and serve over lettuce greens with your favorite toppers including: turkey, tuna, feta, shrimp, blue cheese, toasted nuts, sliced eggs, olives. Add salt and pepper to taste.
