Directions

In a large stock pot, bring water, chilies, beans and salt to a boil; reserve spice packet. Simmer soup, cover, doe 1-1/2 hours. Add ham; simmer, covered,, for 1 hour. While soup is simmering, in a large pan, sauté onions, green bell peppers and garlic in the oil; set aside. Add the stuffed vegetable with the spice packet contents; simmer covered, for an additional 30 minutes. Salt and pepper to taste. Garnish with sour cream and scallions if desired. Add water during cooking time if soup becomes too thick.
