Store in a cool, dry place. Buttermilk Pancakes: 1-1/2 cups 365 Everyday Value Gluten Free Pancake & Waffle Mix (1/2 box), 1 large egg, 1 cup milk, 3 tbsp canola oil. Preheat griddle or frying pan to High. In a large bowl, beat the eggs for 2 minutes. Add 1/2 box 365 Everyday Value Gluten Free Pancake & Waffle Mix and continue mixing for 30 seconds. Do not stop mixer and slowly add milk and oil; mix for 1 minute. Stir to dissolve lumps. Lower heat to Medium and lightly brush cooking surface with oil. Drop batter onto cooking surface. When tops of pancakes begin to form bubbles (very important) flip and cook another 2-3 minutes. Buttermilk Waffles: 1-1/2 cups 365 Everyday Value Gluten Free Pancake & Waffle Mix (1/2 box), 1 large egg, 1 cup milk, 4 tbsp butter, melted, 1 tsp gluten free vanilla (optional). Combine ingredients and stir to dissolve lumps. Wipe the grids of the waffle iron with a lightly oiled piece of paper towel. Preheat waffle iron. Depending on the size of the machine, spoon 2-3 tbsp batter into the center and close the lid. Follow instructions for exact preparation time or check after several minutes, by gently lifting one corner of the lid. If the waffle is golden and comes away from one side of the grid, it's ready. Use a fork to remove. Yield: 6-8 waffles.
